August 2023 – The scientific article “Sumac, ingredient with healthy potential” by CNTA was published on the Spanish magazine of food technology “Tecnifood”.
Within the framework of the SWITCHtoHEALHTY project, the National Centre for Food and Technology Safety (CNTA) is investigating new ingredients of the Mediterranean diet that can be included in different food matrices and whose target audiences are children and adolescents. Among all the compounds studied, CNTA opted for sumac, a spice native to the Middle East that can be found in the Mediterranean basin. The CNTA researcher Sandra Gonzalez Casado, author of the article, illustrates how sumac can be an ideal ingredient to be included in new food product developments, due to its high antioxidant and anti-inflammatory capacity, having a positive impact consumers’ health.
